Earthy, rich flavours develop throughout, with layers of redcurrant and subtle roasted malts creating a balanced, refined finish. This is more than just a beer; it’s an experience—one that showcases the dedication behind our barrel aged program, pushing boundaries and delivering premium, world-class brews.
Barley Wine 2024 | Islay Scotch Whisky Barrel Aged
Our 2024 release unveils a complex tapestry of flavours, beginning with the evocative smokiness of Islay peat that lends an intense and captivating aroma. Beneath this, layers of rich, bready malt unfold, interwoven with nuanced notes of roasted nuts and a delicate whisper of green apple brightness. A gentle wave of soft vanilla emerges mid-palate, enhancing the sumptuous depth before giving way to a refined, dry finish characterised by earthy undertones and the enduring elegance of oak.
Imperial Gooseberry Sour | Chenin Blanc Barrel Aged Sour
This Chenin Blanc barrel aged Gooseberry Imperial Sour, aged for an impressive 26 months, is a masterclass in balance and complexity. At 10.9%, it opens with a piquant burst of gooseberries that immediately commands attention. As the tartness mellows, a harmonious blend of citrus and orchard fruits begins to shine, offering a bright and refreshing contrast.
Wild Berry Imperial Stout | Bourbon Barrel Aged
Crafted with the complexity and depth that define our approach to barrel aging. This rich Imperial Stout is brewed with a blend of eight carefully selected malts, then aged for 21 months in fresh bourbon casks to develop an intricate profile.
From the first taste, it bursts with intense, jammy flavours of raspberries and blackcurrants, creating a vibrant fruitiness that’s balanced by the subtle warmth of the bourbon barrels. Gentle notes of vanilla and smoke linger in the background, adding a refined smoothness to the robust body of the stout.
Blended Imperial Porter | Pinot Noir & Whisky Barrel Aged
A culmination of 5 bespoke malts and an extended boil, and originally brewed in autumn 2021, our traditional porter has spent 25-months in the depths of our barrel store in a variety of barrels.
Initial aromas of cherry and smoke lead into deep and dull bodied porter, with notes of toffee, vanilla and plums in abundance. The Pinot Barrels providing a fruit-rich base upon which the single mal barrels can blend effortlessly with the saline character of the whisky.
